“If you really want to learn about sushi, sit at the cuisine bar and watch the cooks work. Be curious, ask questions! Most people don’t understand sushi, but it is easy to learn. The open kitchen provides a convenient learning environment where we can take you through the entire process: from preparation, to presentation, to tasting the fish. Education improves everyone’s experience – yours and ours – so please don’t be shy.”

When patrons approach the immense front door of Shinji’s flagship restaurant, they get a very physical idea of his emphasis on substance over style. Dwarfed by the huge entryway, an understated, hand-made sign reads “Muramoto,” whispering to only the most attentive passersby. For Shinji, obscurity is the best way to measure a restaurant’s success. “If you are really good, you do not need a sign; people will find you. So if you really want to know what people think, it helps to become a little bit invisible.”

So what makes Muramoto Hilldale stand out among other sushi restaurants? Shinji hesitates to share his answer. “Many people feel this is racist, but I don’t think non-Japanese can create a truly outstanding sushi restaurant. When you grow up in Japan, you have a deep, intuitive sense of what good sushi is. It is more than certain ingredients or techniques, greater than the sum of its parts. And from a logistical standpoint, it is impossible to buy the best products if you cannot speak Japanese. It may be unfair, but a Japanese cook has great advantages in the sushi world.”
